About this Recipe
Craving a bowl of something truly satisfying that warms you from the inside out? This Sausage, Potato and Spinach Soup delivers hearty comfort in just 30 minutes, perfect for busy weeknights.
This recipe shines by combining robust flavors with remarkable speed. Crumbled spicy Italian sausage forms the savory base, while tender potatoes absorb all the delicious broth, and fresh spinach adds a welcome touch of green. It’s a complete meal that feels gourmet without the fuss.
You're in for a deeply flavorful experience with every spoonful of this comforting soup. Imagine perfectly seasoned spicy Italian sausage, complemented by soft, yielding red potatoes, all swimming in a rich, savory chicken broth. The subtle earthy notes of oregano and basil, plus a hint of optional red pepper flakes, create a wonderfully balanced profile. A swirl of heavy cream at the end brings a luscious, velvety finish that makes this soup feel incredibly indulgent, while the baby spinach provides a fresh, slightly bitter counterpoint to the richness. It’s a truly satisfying dish that will leave you feeling nourished and content.
Customization & Variations
Feel free to adjust the spice level by choosing mild Italian sausage instead of spicy, or by omitting the crushed red pepper flakes entirely. If red potatoes aren't available, any waxy potato variety will work well, holding its shape nicely in the soup. You could also experiment with different greens like kale or Swiss chard, though baby spinach wilts quickly and easily.
This hearty soup is ideal for a cozy family dinner or a comforting lunch on a chilly day. Serve it simply with a crusty piece of bread for dipping, or a light green salad to complete the meal.
