Ingredients

  • ⅓ cupolive oil
  • ¼ cuporange juice
  • 3 tablespoonsvinegar
  • 1garlic clove, minced
  • 1 teaspoonminced fresh parsley
  • ¼ teaspoonsalt
  • pepper
  • 8 cupstorn spinach or mixed greens (10 ounce bag)
  • 3 mediumoranges, peeled and sliced
  • 1 cupsliced red onion
  • ½ cupcrumbled blue cheese
  • ¼ cupslivered almonds, toasted

    In a small bowl, whisk the first 7 ingredients. On a serving platter or individual plates, arrange spinach, oranges and onion. Drizzle with dressing. Sprinkle with cheese and almonds.
