Ingredients

  • 1 pound fresh strawberries

    hulled and diced

  • Zest and Juice of one lemon
  • 1/4 tsp salt
  • 1 cup part skim or whole milk ricotta
  • 1/4 cup mascarpone cheese
  • 1 tsp lemon zest
  • Salt and freshly ground black pepper to taste
  • 1 baguette

    sliced and toasted until golden brown

  • 1 tablespoon thinly sliced fresh mint leaves
  • Balsamic Glaze

Directions

    In a large bowl gently stir together all of the ingredients for strawberries then set aside.

    In a blender or food processor add the ingredients for the whipped ricotta and process until smooth and light.
