About this Recipe
Looking for a vibrant, fresh salad that comes together in mere minutes? This Tomato Feta Salad delivers big on flavor with minimal effort, perfect for any meal, especially when tomatoes are at their peak.
What makes this tomato and feta salad truly shine is its elegant simplicity—there's no need for a fussy separate dressing. Instead, a generous pour of good extra virgin olive oil, loads of fresh herbs, and bright seasonings marry directly with the juicy tomatoes, creating its own perfect vinaigrette right in the bowl. The sumac adds a unique, zesty depth that elevates the entire dish.
Prepare your palate for a burst of fresh, savory, and tangy notes. You'll experience the sweet juiciness of ripe tomatoes, the crisp bite of thinly sliced red onion and pungent garlic, and the bright, herbaceous aroma of fresh parsley and dill. The creamy, salty feta cheese adds a delightful counterpoint, while the olive oil and lemon juice create a light, vibrant coating. As the salad sits briefly, the tomatoes release their juices, mingling with the aromatics to form a delicious, spoon-worthy dressing.
While on-the-vine or heirloom tomatoes are preferred for their superior flavor and texture, any ripe, juicy tomato will work beautifully. Feel free to adjust the amount of feta cheese to your liking, or experiment with other fresh herbs like mint or oregano for a slightly different twist. For a deeper, earthier note, a sprinkle of dried oregano could complement the sumac.
This fresh salad is ideal as a light lunch, a vibrant side dish for grilled meats or fish, or a stunning appetizer. Be sure to serve it with crusty bread to soak up all those delicious, herby tomato juices!
