Traditional Rumbledethumps Recipe

Rumbledethumps is a Scottish side dish consisting of creamy mashed potato, with sliced cabbage and sometimes fried onions stirred through it, before it's topped with cheese and baked in the oven.

Ingredients

  • 1kg of potatoes

    approx 2lbs

  • 1 savoy cabbage

    250g or 0.5lb

  • 75g of butter

    0.1lb

  • 100g of mature cheddar cheese

    0.2lb

  • 2 small onions

    optional

Directions

  1. 1

Prepare the potatoes by peeling them and chopping them up.

  2. 2

Boil the potatoes for 15-20 mins until they are soft.

  3. 3

Slice the onion if you are using it and fry it until softened. Then set aside.

  4. 4

Slice the cabbage roughly and cook in 50g butter until it is softened. It will seem like a lot but don't worry; it wilts down in the pan and then again when you stir it with the potatoes.

  5. 5

Once the potatoes are ready, mash them up with the remaining butter and season them to taste.

  6. 6

    Preheat the oven to 180C

  7. 7

Mix the cooked cabbage and the onion through the mashed potatoes.

  8. 8

Put the potato and cabbage mixture into an ovenproof dish.

  9. 9

Top with grated cheese and then bake for 15-20 mins or until the cheese has melted and turned golden brown.

  10. 10

Serve with your chosen main meal.

First things first: Every cheesesteak connoisseur knows that properly caramelized onions are crucial to achieving that trademark flavor, and the old rules certainly apply here. Thinly slice three white onions, toss them in a pot with cola and a pinch of salt, and cook down until the cola is gone—but don’t burn it! It may seem like a lot of onions at first, but in the end it will be the perfect amount. The cheese sauce is the easy part; simply melt the cheese in a pot with some water and whisk until blended. After you’ve browned the Impossible™ Beef and added the caramelized onions to it, all that’s left is to assemble the sandwiches on your hoagie rolls and broil in the oven for about 20 seconds. Now you’re all set. Delicious, easy, authentic, homemade cheesesteak sandwiches with Impossible Beef. No need to fly to Philly! This recipe makes enough for three cheesesteaks, but you’re not obligated to share.

This Rumbledethumps recipe works because it takes humble ingredients and transforms them into something truly special. What you'll get is a wonderfully warm and comforting dish, ideal for any meal needing a substantial and flavorful side. The mashed potatoes are creamy and smooth, while the savoy cabbage adds a gentle sweetness and a pleasant chew. With the optional addition of fried onions, you introduce another layer of savory depth. The highlight, of course, is the mature cheddar cheese baked until golden and irresistible, forming a savory crust that makes each spoonful a delight. This dish is pure comfort in a baking dish, rustic and deeply satisfying.

Customization for Rumbledethumps is straightforward. The recipe specifies that small onions are optional, so you can easily omit them if you prefer a simpler flavor profile, or include them for an extra layer of savory taste. While mature cheddar is called for, feel free to use your favorite sharp cheddar cheese for the topping. Experimenting with other strong, meltable cheeses could also provide an interesting twist, though for a traditional experience, mature cheddar is key.

Serve this Rumbledethumps recipe alongside roasted meats, hearty stews, or even as a comforting main course for a lighter meal. Its robust flavors and satisfying texture make it a perfect complement to many classic dishes, especially on a chilly evening.
