    from the can

    1 c
  • pure maple syrup
    2 tbsp
  • coconut sugar
    2 tbsp
  • vanilla extract
    1 tsp
  • coarse sea salt
    ½ tsp
  • coconut oil
    1 tsp

Directions

  1. 1

Preheat oven to 350 degrees F. Grease two small skillet pans, medium ramekins OR a small quart size dish with nonstick cooking spray.

  2. 2

To make topping: Combine the flour, oats and brown sugar in a large bowl until well-combined. Add in melted coconut oil and stir until the mixture is crumbly and resembles wet sand.

  3. 3

Make the filling by placing the sliced apples, maple syrup, cinnamon and vanilla in a large bowl and toss to combine. Take 1 tablespoon of the topping mixture and toss with the apple mixture. Place the apple mixture in prepared pans (evenly distribute) and sprinkle with the topping.

  4. 4

Bake the crisp(s) on a baking sheet (just in case the filling bubbles over!) for 40-45 minutes or until topping is golden brown and filling is slightly bubbly. Remove from oven and cool 10 minutes on a wire rack.

  5. 5

To make the coconut milk caramel: Whisk coconut milk, maple syrup, coconut sugar, vanilla, sea salt and coconut oil together in a small saucepan over medium-high heat. Bring to a low boil and simmer for about 20-30 minutes until the mixture boils down and thickens. Make sure you stir every few minutes. Once mixture has thickened up, remove from heat and allow to cool for 10 minutes. This should thicken the mixture up even more.

  6. 6

Serve apple crisps with ice cream and large drizzle of coconut milk caramel.

About this Recipe

Craving a cozy, comforting dessert that feels special but is lightened up and dairy-free? This Vanilla Coconut Milk Caramel Apple Crisp For Two is your answer, perfectly portioned for an intimate evening, ensuring every sweet bite is savored.

What makes this recipe truly stand out is its rich, homemade coconut milk caramel sauce, a dairy-free dream that elevates the classic apple crisp from simple to sublime. By thoughtfully using clean ingredients like pure maple syrup and coconut sugar, alongside whole wheat flour and rolled oats, you get all the indulgence and classic caramel apple flavor without any of the heaviness, making it a truly satisfying, guilt-free treat.

Prepare for a delightful interplay of textures and flavors with every spoonful. You'll experience perfectly tender, sweetango apples, gently spiced with cinnamon and vanilla, nestled invitingly beneath a warm, golden-brown, and crispy oat topping. But the true star is the homemade, luscious, and velvety coconut milk caramel that generously coats the apples, offering a sweet, rich, and slightly salty finish. The warmth of the spices and the pure vanilla extract throughout provide that comforting embrace, making this dessert feel like a decadent hug in a bowl, absolutely ideal for a cozy night in.

  • For a different apple experience, you could experiment with other sweet-tart varieties if sweetango apples aren't readily available; just ensure they hold their shape well when baked.
  • If you prefer a nuttier topping, a sprinkle of chopped pecans or walnuts could be folded into the oat mixture for added crunch and flavor.
  • While the recipe specifies organic brown sugar or coconut sugar for the topping, either works beautifully, allowing you to fine-tune the depth of the caramel notes to your preference.

This crisp is designed for sharing, making it the perfect sweet ending for a romantic date night or a special dessert to enjoy with a loved one. Don't forget to serve it warm, perhaps with a generous scoop of your favorite dairy-free vanilla ice cream for the ultimate indulgence, enhancing both texture and temperature contrast.
