Wild Rice Pilaf
Ingredients
- 1 1/2 cups wild rice blend
- 3 cups vegetable broth
or chicken broth for non-vegetarian
- 2 tbsp olive oil or butter
- 1 medium onion
finely chopped
- 3 stalks celery
diced
- 1 medium carrot
diced
- 3 cloves garlic
minced
- 1/2 tsp dried thyme
- 1/2 tsp dried rosemary
crushed
- 1/2 cup dried cranberries
optional, for a hint of sweetness
- 1/4 cup slivered almonds or chopped pecans
optional, for crunch
- 2 green onions
thinly sliced
- to tasteSalt and pepper
- 2 tbsp fresh parsley
chopped, for garnish

Rinse the rice blend under cold water in a fine mesh strainer to remove excess starch.
