Ingredients

  • 1 lb Yukon gold potatoes

    cut into bite size pieces about 1/2” -3/4” thick, skin-on, scrubbed

  • 1 ½ Tbsp extra virgin olive oil
  • ½ tsp fine sea salt
    or added to taste
  • ½ tsp Italian seasoning
  • ½ tsp garlic powder
  • ¼ tsp freshly ground black pepper
    or added to taste
  • 1 Tbsp parsley

    finely chopped, to garnish, optional

Directions
