This Best Corn Casserole recipe delivers a delightful cross between a rich corn pudding and classic cornbread, making it a perfect addition to any meal, from holiday feasts to weeknight dinners.

What makes this baked corn casserole truly shine is the thoughtful combination of a convenient Jiffy corn muffin mix with two distinct types of corn: tender frozen corn and luscious creamed corn. This pairing ensures a layered texture and an intense, sweet corn flavor that stands out. The addition of whole milk and heavy cream contributes to a wonderfully moist, custardy interior, ensuring every bite is rich and satisfying.

You can expect a dish with a uniquely comforting profile—tender, almost spoonable, with a subtle sweetness balanced by savory notes. The Jiffy mix provides that familiar, slightly crumbly cornbread texture, while the creamed corn adds a velvety smoothness that truly melts in your mouth. This casserole is designed to be straightforward, requiring minimal prep work for a result that tastes like you spent hours in the kitchen. It's a truly crowd-plepleasing side that's both hearty and refined.

While this recipe is excellent as written, you can easily adapt it to your taste. For a less sweet profile, slightly reduce the granulated sugar. If you enjoy a touch of heat, a small pinch of cayenne pepper can be added alongside the sweet paprika for a subtle kick. The fresh sliced chives are a fantastic garnish for brightness, but chopped green onions or parsley would also be lovely.

This versatile corn casserole is an ideal accompaniment for a variety of occasions. Serve it warm alongside roasted chicken, holiday ham, or classic barbecue for a truly memorable and comforting spread.
