Cauliflower Fritters with Feta Cheese

4 servings
These cauliflower fritters make for a great appetizer or even full meal for a light dinner. They're full of veggies and taste great with a yogurt based dip.

Ingredients

  • 4 cups cauliflower florets
  • 2 egg
  • 0.5 cup carrots
  • 2 celery stocks
  • 1 tbsp olive oil
  • 0.5 cup bread crumbs
  • 0.25 cup all purpose flour
  • 0.5 cup feta cheese
  • 4-5 green onions
  • 0.5 red onion
  • pinch salt
adjust to taste, amount will vary on type of feta you are using.
  • 0.25 tsp black pepper
  • 1 tsp oregano
  • 0.5 cup fresh parsley
  • pinch red pepper flakes

    optional

  • 2 garlic cloves

Directions

  1. 1

Pulse in a blender cauliflower, carrots, celery, garlic and place on a mixing bowl. If vegetables have too much liquid, you can squeeze them with a cheesecloth to remove some of the moisture.

  2. 2

Bread crumbs - pulse stale bread separately or use store bought bread crumbs. Add breadcrumbs over veggies on the mixing bowl. Add eggs, feta cheese, chopped parsley, oregano, salt, pepper, red pepper flakes and olive oil.

  3. 3

Chop red onion and green onions as fine as you can, add those to the bowl as well. Finally add flour over everything.

  4. 4

Mix everything well with a wooden spoon until you get a homogenous dough.

  5. 5

Use an ice cream scoop to create equal patties. Press with your hands to shape properly. I wouldn't make them too thick since it's harder to cook properly.

  6. 6

Place patties on the tray and air fry at 400 degrees F for about 20 minutes. depending on the type of air fryer you use this timing might slightly change so keep an eye on the fritters.

  7. 7

Serve with your favorite dip. I love serving them with a yogurt based dip (add either mint, dill or cilantro to dip according to taste). Enjoy!

This recipe shines because it cleverly combines humble vegetables like cauliflower, carrots, and celery with the bold, tangy notes of feta cheese and aromatic herbs. It's a fantastic way to enjoy a substantial dose of veggies in a fun, savory form, perfect for any occasion when you want something fresh and flavorful without spending hours in the kitchen.

When you bite into these fritters, expect a savory experience where the earthy sweetness of cooked vegetables meets the salty, piquant creaminess of feta. They are designed to be full of texture and taste, making them incredibly satisfying whether as a starter or the main event of a light dinner.

Customization is simple with these versatile fritters. Feel free to adjust the spice level by adding more (or less) red pepper flakes according to your preference. While this recipe specifically calls for cauliflower, carrots, and celery, fritters are often adaptable to other grated vegetables you might have on hand. Remember that the type of feta cheese you use can significantly impact the overall saltiness, so be sure to taste and adjust the salt as needed.
