Cowboy Caviar Pasta Salad
Ingredients
- 1 lbbowtie pasta
- 1 tspkosher salt
- 1 tspcoarse ground black pepper
- 1 lb80/20 ground beef
- taco seasoning mix
- 1 cancorn
- 15 ozblack beans
drained
- 2 chalved or quartered cherry tomatoes
- 2 cfreshly shredded cheddar cheese
- 4green onions
thinly sliced
- ¼ cfinely chopped cilantro
- ¾ cmayo
- ½ csour cream
- ½ cchicken broth
- 1 tspapple cider vinegar
- 3chipotle peppers in adobo sauce
- 1 tspdill
- 1 tspgarlic powder
- 1 tsponion powder
- ½ tspsalt
- 1juice from lime
Directions

Boil water and cook pasta per instructions on box

Brown the ground beef, drain excess fat then season with the taco seasoning.

Cook corn over high heat on a griddle until charred then remove.

Make the chipotle lime ranch by combining all of the ingredients in a food processor then blend.

Combine the pasta, beef, corn, black beans, tomatoes, cheese, cilantro and green onions in a large bowl. Pour dressing over the top of the ingredients then mix thoroughly so it’s lightly coated.

Refrigerate for 1 hour then serve.
