Cowboy Stew
Ingredients
- 1 pound ground beef
- 1 teaspoon Slap Ya Mama seasoning
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon red pepper flakes
- 15 ounce diced tomatoes
drained
- 10 ounce Rotel
drained
- 4 ounce diced green chilies
- 3 potatoes
peeled, diced
- 2 cups beef broth
- 2 cups water
- 29 ounce pinto beans
- 15.25 ounce whole kernel corn
drained
- 12 ounce frozen mixed vegetables
Directions

In a large Dutch oven or large pot over medium-high heat, add ground beef, Italian sausage, smoked sausage, onions and seasonings. Cook until meat is no longer pink and onions are translucent.

Drain grease and return to pan.

Pour diced tomatoes, Rotel, diced green chilies, potatoes, pinto beans, beef broth and water into the meat mixture. Stir.

Reduce heat and cook over medium heat until potatoes are almost tender.

Add corn and frozen mixed vegetables to pot, stir and continue cooking until vegetables are hot and heated through.
