Easy & Quick Spicy Asian Cucumber Salad

Spicy Asian Cucumber Salad. A crispy, refreshing and spicy cucumber salad. Seasoned with soy sauce, rice vinegar, garlic, green onions, sugar, sesame oil, sesame seeds and chili oil. Perfect as a side dish.

Ingredients

  • 6 Mini cucumbers

    or Persian cucumbers

  • 2 tsp Salt

    to drain water

  • 1 tbsp Regular soy sauce
  • 2 cloves Garlic

    minced

  • 1 tbsp Rice vinegar

    or white vinegar

  • 1 tbsp Chinese chili oil
  • 1 tbsp white granulated sugar
  • 1 tsp Sesame oil
  • 1 tsp Sesame seeds
  • 2 tbsp green onion

    finely sliced

Directions

  1. 1

Wash cucumbers and cut off the ends.

  2. 2

Place one cucumber between two chopsticks that you don’t mind nicking up (like takeout chopsticks). Make thin diagonal slices on the top. Then flip the cucumber over and do the same on the other side. Then cut cucumber into halves. Repeat for remaining cucumbers. Transfer to a large bowl. Alternatively, you can thily slice your cucumbers too. *Refer to video below for better visuals. Note: Do not cut them in on a straight angle or the spiral will not work.

  3. 3

Sprinkle salt over cucumbers and gently massage into them. Let cucumbers soak in salt for 5 minutes (no more than 10 minutes or they will break down). Rinse with cold water at least 3-4 times to completely remove the salt. Strain and set aside.

  4. 4

Combine dressing ingredients in a separate bowl.

  5. 5

Pour dressing over cucumbers and gently mix. Enjoy!

About this Recipe

Looking for a side dish that wakes up your palate and comes together in minutes? This Easy & Quick Spicy Asian Cucumber Salad is your answer, delivering bold, refreshing flavors with minimal effort that will impress without keeping you in the kitchen.

The magic lies in how the cucumbers become wonderfully crispy, complemented by a perfectly balanced dressing. Salting the cucumbers beforehand helps draw out excess water, ensuring a delightful crunch that stands up to the tangy, spicy, and savory notes of soy sauce, rice vinegar, and chili oil. This simple technique is key to preventing a watery salad.

Get ready for a vibrant burst of flavor with every bite. You'll experience the satisfying crispness of the cucumbers, enveloped in a dressing that's got just the right amount of tang from rice vinegar, savory depth from soy sauce, and a gentle heat from Chinese chili oil. The subtle sweetness of sugar balances the spice, while freshly minced garlic and bright green onions add aromatic layers, finished with nutty sesame oil and sesame seeds for texture and aroma. It's a remarkably refreshing yet exciting side that beautifully complements any meal.

Feel free to adjust the spice level by adding more or less Chinese chili oil to suit your preference, or skip it entirely for a milder version. For a twist on the tang, while rice vinegar is preferred, white vinegar can work in a pinch for acidity. You can also explore different types of cucumbers, though mini or Persian varieties provide the best texture for this salad.

This spicy cucumber salad is the ultimate versatile side dish, perfect for cutting through richer meals or adding a bright, zesty contrast to grilled meats or rice bowls.
