Smashed Asian Cucumber Salad

4 servings
This Smashed Asian cucumber salad recipe is light, refreshing and perfect for the summer, but packed with flavor from a zingy dressing, garlic, and cilantro. It only takes 10 minutes to make!

Ingredients

  • 2 seedless cucumbers)

    (about 1 to 1 1/2 lbs; 600g

  • 1 teaspoon salt
  • 2 1/2 teaspoons sugar
  • 2 teaspoons sesame oil
  • 3 teaspoons light soy sauce
  • 1 1/2 tablespoons rice vinegar
  • 2-4 cloves garlic)

    (finely chopped

  • 1-2 teaspoons chili oil)

    (optional

  • 2 teaspoons toasted sesame seeds
  • a small handful of chopped cilantro

Directions

  1. 1

Wash the cucumbers and pat them dry with a clean towel. Make the salad dressing by combining the salt, sugar, sesame oil, light soy sauce, and rice vinegar. Stir until the sugar and salt are completely dissolved. Set aside.

  2. 2

On a cutting board, lay a large knife flat against the cucumber, and smash it lightly with your other hand. The cucumber should crack open and smash into four sections. Repeat along its full length. Once the whole cucumber is completely open (usually into 4 long sectional pieces), cut it at a 45-degree angle into bite-sized pieces.

  3. 3

In a large bowl, mix the cut cucumber with the prepared dressing, garlic and chili oil. Toss it well. Serve, garnished with sesame seeds and cilantro. (Note: if you prefer to omit the chili oil, heat up a tablespoon of oil in a pan and drizzle it over the cucumber. Seems weird, but in Chinese cooking, uncooked vs. cooked oil have different flavors and are treated as such!)

About this Recipe

Looking for a refreshingly light yet incredibly flavorful side that comes together in a flash? This Smashed Asian Cucumber Salad is your answer, bringing vibrant taste and a delightful texture to any meal, especially on a warm day. It’s perfect for when you crave something bright and zingy, ready in just 10 minutes.

The magic of smashed cucumbers isn't just a fun kitchen technique; it creates more surface area for the zingy dressing to penetrate, infusing every bite with the perfect balance of savory soy, bright rice vinegar, aromatic garlic, and nutty sesame. This method prevents mushiness and ensures every craggy piece of cucumber is coated in flavor, truly setting it apart from a simple sliced salad.

Prepare your palate for a symphony of sensations. You'll experience the crisp, cool bite of the cucumbers, beautifully complemented by the rich, umami notes of light soy sauce and the subtle nuttiness of sesame oil. The addition of fresh garlic and chopped cilantro brightens the entire dish, while optional chili oil introduces a gentle, enlivening warmth without overwhelming the refreshing core. This salad is wonderfully balanced – light enough to cleanse the palate yet deeply satisfying, making it an ideal companion for heartier dishes. It's surprisingly simple to prepare, perfect for even beginner cooks.

This Smashed Asian Cucumber Salad is wonderfully versatile.

  • For a vegetarian or vegan option, this recipe is already perfect as is.
  • Adjust the chili oil to your heat preference, or omit it entirely for a milder experience.
  • If you don't have cilantro, fresh scallions can offer a similar aromatic lift.
  • Consider adding a sprinkle of crushed peanuts for an extra layer of texture and nutty flavor.

Serve this vibrant salad as a perfect counterpoint to grilled meats, roasted fish, or any stir-fry. It’s an ideal refreshing side for summer gatherings, backyard barbecues, or a quick, flavorful addition to your weeknight dinner spread.
