Ingredients

  • tilapia fillets

    6 oz each

    4
  • zucchini

    sliced

    1
  • yellow squash

    sliced

    1
  • asparagus

    trimmed and cut into thirds

    ½ lb.
  • kosher salt
    1 ¼ tsp
  • black pepper
    ¼ tsp
  • garlic powder
    1 tsp
  • dried dill
    1 tsp
  • lemon or 2 smaller lemons

    thinly sliced

    1 large
  • unsalted butter

    cut into thin slivers

    4 tbsp
  • capers
    1 ½ tbsp
  • cooking spray
  • foil

Directions

  1. 1

Preheat the grill to high (between 450-500 degrees)

  2. 2

For each packet, you will need 2 large (about 20 inches long) sheets of foil, or just 1 sheet of heavy duty aluminum foil.

  3. 3

Create four packet making stations with the foil, then spray each with cooking spray or brush with olive oil.

  4. 4

Mix together seasonings (salt, pepper, garlic powder, and dill) in a bowl. Layer each foil packet with one tilapia fillet and 1/4 of the veggies. Sprinkle evenly with the seasoning mixture, turning the fish over to coat both sides.

  5. 5

Place several slivers of butter on top of each packet, a few on both the fish and the veggies. Put two slices of lemon on top of the fish, then toss the capers over everything.

  6. 6

Fold the long sides of the foil in towards the center and roll over to seal, then roll up the short edges.

  7. 7

Place on the preheated grill, cover, and cook for 10-12 minutes. If the fillets were frozen, add a few minutes to the cooking time.

  8. 8

To serve, carefully remove the fish from the grill and peel back the foil layer. Fish are done when they are white (not translucent) and flake easily with a fork. Serve in the foil packet or on plates with the sauce from the bottom of the packet.

About this Recipe

Craving a healthy, flavorful summer meal that comes together in a flash? This Foil Packet Grilled Tilapia with Veggies recipe delivers tender fish and perfectly cooked vegetables, all with minimal cleanup, making it your go-to for effortless weeknight dinners.

Why This Recipe Works

The magic of this recipe lies in the humble foil packet. It creates a steamy, flavorful environment on your grill, ensuring your tilapia stays incredibly moist and flaky while the summer vegetables become wonderfully tender. This technique infuses every bite with bright lemon, aromatic dill, and rich butter, giving you restaurant-quality results without the fuss or excess oil.

What to Expect

You'll discover a light yet satisfying dish bursting with fresh, vibrant flavors. The mild tilapia perfectly absorbs the bright notes of lemon and dill, complemented by the savory kick of capers and the subtle richness of melted butter. The zucchini, yellow squash, and asparagus emerge from the packet tender-crisp, never mushy, offering a delightful texture contrast. This naturally healthy meal feels indulgent without being heavy, making it an ideal choice for a balanced summer dinner.

Customization & Variations

While tilapia shines here, you can easily substitute it with other firm white fish like cod or snapper for a similar flaky texture. Feel free to adjust the amount of garlic powder or dill to your preference. If capers aren't your favorite, you can simply omit them, though they do add a lovely briny zest that brightens the dish.

Serving & Context

This grilled tilapia dish is perfect for a relaxed summer evening, whether it's a casual family dinner or a quick meal after a busy day. Serve it straight from the packets for a fun, interactive presentation, perhaps alongside a simple green salad or a scoop of quinoa to round out the meal.
