
Green chile breakfast casserole has everything you want in a breakfast egg bake: flavorful chiles, fluffy cottage cheese and gooey Monterey Jack. Plus, it can be made ahead of time!
Whisk or beat eggs for three to five minutes until pale yellow. In a separate bowl, stir flour, baking powder and salt together. Add to the eggs and mix well. Fold in cheese and chiles.
Preheat the oven to 350°F. Pour the egg batter into a greased 13x9 inch baking dish. Bake uncovered for 35 to 40 minutes until the center is puffy and set. It a knife inserted in the center comes out clean. Let stand for five minutes before serving.
