Mediterranean Chopped Salad
Ingredients
- 1/4 cup olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon fresh lemon juice
- 1 tablespoon dijon mustard
- 1 garlic clove
peeled and minced
- 2 teaspoons dried oregano
- 1/2 teaspoon sea salt
- 1/8 teaspoon black pepper
- 2 heads Romaine hearts
rinsed, dried and chopped into fine pieces, or 7 ounce clamshell package
- 1/2 of an English cucumber
quartered and sliced fine
- 1/2 pint grape tomatoes
whole or halved
- 1 cup kalamata olives
finely chopped
- 1 cup green bell pepper
diced fine
- 1 cup red onion
diced fine
- 4 ounces crumbled feta cheese

In a large salad bowl, whisk together olive oil, red wine vinegar, lemon juice, dijon mustard, minced garlic, oregano, salt and pepper.

Right over the top of the dressing, add in the lettuce, olives, onion, cucumber, bell pepper, tomatoes, and half the feta cheese. Toss to combine all the ingredients, making sure to really get the dressing mixed in entirely.

Add the remaining half of feta cheese over the top.
