Customization & Variations
Feel free to adjust this recipe to your pantry or preferences. While full-fat Greek yogurt is preferred for its richness, a lower-fat plain Greek yogurt will still deliver on the tenderizing benefits. If you're out of fresh lemons, a good quality bottled lemon juice can work in a pinch. You could also experiment with adding a pinch of dried oregano or marjoram for an extra aromatic kick if you don't have Italian seasoning blend readily available.
These versatile Greek chicken thighs are perfect for a casual family dinner or easy meal prep. Serve them with a simple side salad, roasted vegetables, or over a bed of fluffy rice or quinoa for a complete and wholesome meal.
