Roasted Zucchini with Feta
Ingredients
- 1 ¼ pounds zucchini
2 to 3 medium, 566g
- 2 tablespoons olive oil
- 1 clove garlic
minced
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon fresh ground black pepper
- 2 ounces feta cheese
56g
- 1 tablespoon chopped fresh dill
Directions
- 1
Preheat the oven to 425°F (218°C). Prepare a baking sheet (we roast the zucchini directly on the baking sheet, but for easy clean-up, put down a silicone baking mat or a sheet of parchment paper).
- 2
You can cut the zucchini in any way you like. You can slice it into 1/4-inch rounds, cut it into half moons, or chop it into bite-size pieces.
- 3
Add the zucchini to your baking sheet. Scatter the olive oil, garlic, salt, and pepper over it. Toss well, and then spread the zucchini into one layer.
- 4
Roast the zucchini until they are tender and have picked up some color, 15 to 20 minutes.
- 5
Remove the baking sheet from the oven, stir, and then crumble the feta cheese over the zucchini.
- 6
Roast for another 5 minutes.
- 7
Serve with fresh dill sprinkled on top.

About this Recipe
Tired of bland zucchini? Transform your everyday squash into a vibrant, savory side dish that’s bursting with flavor! This Roasted Zucchini with Feta recipe delivers tender, garlic-infused zucchini elevated by creamy feta and fresh dill.
What makes this dish a standout is its clever combination of simple, fresh ingredients. Roasting the zucchini with garlic creates a depth of savory flavor, while the addition of salty feta and bright, aromatic dill after cooking provides a delightful contrast that truly makes the zucchini shine. It's a quick way to add gourmet flair to any meal.
Prepare for a side dish that's far from boring. You'll enjoy tender, slightly caramelized zucchini infused with the pungent warmth of roasted garlic. The crumbled feta melts ever so slightly from the residual heat, adding a creamy, tangy counterpoint that's beautifully balanced by the fresh, herbaceous notes of dill. This dish is savory, fresh, and remarkably satisfying, proving that sometimes the simplest preparations yield the most impressive results.
Feel free to personalize this easy recipe. If fresh dill isn't available, fresh parsley or chives would offer a similar herbaceous lift. For a heartier dish, you could toss in some cherry tomatoes or thinly sliced red onion before roasting. To make it a more substantial side, consider a squeeze of lemon juice or a sprinkle of toasted pine nuts just before serving.
This versatile roasted zucchini makes an excellent accompaniment to grilled chicken, fish, or any roasted meat. It also stands beautifully on its own as a light lunch or a vibrant addition to a Mediterranean-inspired spread.
