- 2 cwater
- 2cans beef broth
14.5-ounce
- 6 sliceswiss or provolone cheese

we like ciabatta
Directions
- 1
Heat olive oil in a large skillet over medium-high heat. While the oil is heating, generously season all sides of the chuck roast with kosher salt and freshly ground pepper.
- 2
When the oil starts to shimmer, carefully place the roast in the hot pan and sear it on all sides by letting it sit without moving for a minute or two on each side before flipping it. Searing won't take very long - you just want to quickly brown the roast to add flavor and seal in the juices.
- 3
Transfer the roast and the pan juices to your slow cooker. Sprinkle onion soup mix over the roast and add water and beef broth. Cook on high for 4-6 hours or on low for 8-10 hours.
- 4
When the meat is so tender that it shreds easily with a fork, remove the roast from the slow cooker and shred. Serve by piling the shredded meat onto sliced, crusty rolls with a slice of Swiss cheese. Toast the cheese and top bun under the broiler until the cheese melts and the bun starts toasting. Serve with the juices from the slow cooker as au jus for dipping.

The magic of the slow cooker transforms a simple beef chuck roast into unbelievably tender, shreddable beef, soaking up all the savory goodness from the beef broth and dry onion soup mix. This hands-off approach ensures maximum flavor development, making dinner a breeze. The result is a deeply satisfying meal where the beef is the star.
You can expect a truly satisfying sandwich experience. Each bite features succulent, fork-tender roast beef, enhanced by the rich, aromatic au jus it's cooked in. Paired with a crusty roll and generously topped with melty Swiss or provolone cheese, it's a comforting classic that hits all the right notes. The beef is so tender it practically melts in your mouth, perfectly balanced by the slight chew of the roll and the savory tang of the cheese.
Customization & Serving
Feel free to experiment with different cheeses; while Swiss and provolone are classic choices, cheddar or a Monterey Jack blend would also melt beautifully. For the rolls, if ciabatta isn't available, any crusty roll that can hold up to the juicy beef and a good dip into the au jus will work perfectly. The key is a roll that provides a nice textural contrast to the tender beef.
These Slow Cooker French Dip Sandwiches are ideal for a comforting weeknight dinner, a casual weekend lunch, or even for feeding a crowd during a game day gathering. Serve them with a simple side salad or some potato chips to complete the meal.
