Sweet Potato Casserole
Ingredients
- 1/2 cup unsalted butter
at room temperature, plus more for greasing the pan, 1 stick
- 6 large sweet potatoes
scrubbed, about 4 pounds
- 2 large eggs
at room temperature
- 1 can sweetened condensed milk

- 1 teaspoon vanilla extract
- 1 teaspoon kosher salt
- 1 cup finely chopped pecans
- 1 cup lightly crushed cornflakes

- 1/4 cup unsalted butter
