White Bean Dip

Ingredients

  • cooked cannellini beans

    drained and rinsed

    1 ½ c
  • extra-virgin olive oil
    2 tbsp
  • fresh lemon juice
    2 tbsp
  • lemon zest
    ½ tsp
  • garlic clove
    1 small
  • sea salt
    ½ tsp
  • freshly ground black pepper
  • water

    if needed

    2 tbsp
  • torn fresh basil leaves
    2 tbsp
  • chopped fresh rosemary leaves
    2 tsp

Directions

    In a food processor, pulse the cannellini beans, olive oil, lemon juice and zest, garlic, salt, and several grinds of pepper until combined. If the bean dip is too thick, slowly add the water with the food processor running. Process until smooth. Blend in the basil and/or rosemary, if desired.
