Tips for Success & Variations
This simple chicken enchilada recipe is wonderfully adaptable:
- Spice it Up: For a touch more heat, mix a pinch of cayenne pepper into the Alfredo sauce or choose a spicy salsa verde.
- Cheese Please: While Monterey Jack melts beautifully, feel free to use a blend of cheddar and Monterey Jack, or even a Mexican cheese blend for extra flavor.
- Add Veggies: Want to sneak in some vegetables? Stir in a can of drained corn or black beans with the chicken mixture before layering.
- Serving Suggestions: This creamy chicken enchilada casserole is fantastic on its own, but also pairs wonderfully with a side of refried beans, Mexican rice, or a fresh green salad. Don't forget the optional garnishes of fresh cilantro and diced tomatoes for a pop of color and flavor!
