Bacon and White Cabbage Gratin

Bacon and White Cabbage Gratin

Charred cabbage and bacon are baked in decadent cream and Gruyere for an easy and elegant side.

Ingredients

  • 6-8 oz Maplewood smoked bacon

    chopped

  • 5-6 cabbage wedges
  • 1 cup heavy cream
  • 1 cup Gruyere cheese

    grated

  • salt and pepper to taste
  • fresh thyme

Directions

  1. 1

Preheat the oven to 400 degrees.

  2. 2

Add chopped bacon to a cast iron skillet over medium heat. Allow it to cook until the fat has rendered but the bacon hasn't overcooked. Remove from the pan, leaving the drippings.

  3. 3

Arrange the cabbage wedges in the hot skillet. Allow the first side to get color and char, about 5 minutes. Flip and let the second side char for about another 5 minutes, or until it has some color.

  4. 4

Pour the heavy cream over the cabbage. Evenly sprinkle the bacon over the tops. Season with salt and pepper. Add the thyme, and finally sprinkle the Gruyere over the top.

  5. 5

Allow the cabbage to bake for 20 minutes, or the cabbage is fork tender and the cream has thickened and is bubbly. Enjoy!

About this Recipe

Craving a side dish that's both comforting and elegant? This Bacon and White Cabbage Gratin delivers a rich, savory experience perfect for any meal, transforming humble ingredients into something truly special. It’s an easy and decadent side that feels gourmet.

The magic of this gratin lies in the combination of charred cabbage and smoky Maplewood bacon, baked until tender in a decadent heavy cream sauce with melted Gruyere. This layered approach ensures every forkful is bursting with flavor, making it a standout accompaniment to any main course.

Prepare for a dish where the humble white cabbage transforms into something extraordinary. Each bite offers the satisfying crispness and deep flavor of the bacon, perfectly balanced by the sweet, tender notes of the charred white cabbage. All of this is enveloped in a rich, cheesy cream sauce that's utterly satisfying. The Gruyere cheese adds a nutty, savory depth that makes this gratin feel truly luxurious.

While delicious as is, you can explore simple variations. Consider adding other hard, nutty cheeses like Comté or Emmental for a slightly different flavor profile. For a subtle aromatic touch, a pinch of freshly grated nutmeg would complement the cream and cheese beautifully. You could also experiment with different smoked bacon varieties, though the Maplewood offers a unique sweetness.

This Bacon and White Cabbage Gratin makes an excellent addition to a hearty roast dinner or as a standout side for a more casual weeknight meal. It pairs beautifully with roasted meats or a simple green salad, providing a rich counterpoint to lighter dishes.
