These decadent bacon-wrapped scallops will not only wow your party guests, but they're an extremely simple and easy-to-make party appetizer.

Ingredients

  • dry sea scallops
    1 lb
  • Kosher salt
  • Freshly ground black pepper
  • bacon
    8 oz
  • unsalted butter
    2 tbsp
  • garlic

    smashed

    1 clove
  • fresh thyme leaves
    1 tbsp
  • Lemon wedges

    for serving

Directions

    Preheat oven to 425°. Line a rimmed baking sheet with foil.

    Pat scallops dry with paper towels; season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Cut bacon slices in half crosswise so you get 3"- to 4"-long strips. Wrap bacon around scallops and secure with a toothpick. Arrange scallops on prepared sheet.

    In a small skillet over medium heat, melt butter. Add garlic and thyme leaves and cook, stirring, until fragrant, about 1 minute. Spoon butter and thyme over scallops, leaving garlic in pan.

    Roast scallops until bacon is crisp and scallops are cooked through, 15 to 20 minutes.

    Remove toothpicks. Transfer scallops to a platter and serve warm with lemon wedges alongside.
