Blackberry Crumble Bars
Ingredients
- ***For the filling:***
- 3 cups fresh blackberries
- 6 tablespoons seedless blackberry jam
- 1/4 cup white sugar
- 3 tablespoons cornstarch
- 1/8 teaspoon kosher salt
- ***For the crumble:***
- 3/4 cup quick-cooking oats
uncooked
- 1 cup flour
- 1/2 cup light brown sugar
packed
- 1/2 cup almonds
sliced
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1/2 cup unsalted butter
melted
Directions
- 1
In a small saucepan, combine the blackberries, the blackberry jam, the white sugar, the cornstarch, and 1/8 teaspoon of the kosher salt.
- 2
Heat the blackberry mixture over medium-high heat and stir until the mixture comes to a boil.
- 3
Reduce the heat to medium and continue to occasionally stir the blackberry mixture until it thickens, about 7-10 minutes. Be careful that the mixture does not stick to the bottom of the pan.
- 4
Transfer the blackberry mixture from the heat and allow it to cool.
- 5
Preheat the oven to 350 degrees F.
- 6
Line an 8x8-inch baking pan with a large piece of parchment paper, enough to cover the bottom with extra room on two sides to make a sling.
- 7
Spray the parchment paper and any exposed parts of the pan with cooking spray.
- 8
Combine the oats, the flour, the brown sugar, the almonds, the cinnamon, the baking soda, and the remaining salt in a bowl and stir until well-mixed.
- 9
Drizzle the melted butter into the oat mixture and stir the crumble mixture until incorporated.
- 10
Spread 2 cups of the crumble mixture out onto the prepared pan and flatten.
- 11
Bake the crumble mixture in the oven until lightly golden, about 10 minutes.
- 12
Transfer the crust from the oven and allow it to cool for 5 minutes.
- 13
Pour the filling over the crust and sprinkle the remaining crumble mixture evenly over the top.
- 14
Return the pan to the oven and bake until the top is lightly browned and the filling is bubbly, about 40 minutes.
- 15
Cool completely in the pan, about 1-2 hours.
- 16
Use the parchment to lift the blackberry crumble out of the pan.
- 17
Cut into bars and serve.

What sets these Blackberry Crumble Bars apart is the interplay of textures—a perfectly crunchy, buttery base meeting a spiced, almond-flecked crumble, all sandwiching a burst of sweet-tart blackberry goodness. Prepare for a symphony of flavors and textures that dance on your tongue with each bite. You'll savor the rich, buttery crunch of the crust, followed by the bright, jammy sweetness and tartness of the blackberry filling. This filling is beautifully thickened, offering a delightful consistency that contrasts with the firm base. The crumble topping adds another layer of texture with its oats and sliced almonds, complemented by warm cinnamon spice.
While fresh blackberries are the star, you could experiment with a mix of berries if you're looking for a slight variation in flavor, though fresh blackberries offer unparalleled taste. If you're not a fan of almonds, pecans or walnuts could offer a different nutty crunch to the crumble. For an extra touch of warmth, consider a pinch of nutmeg alongside the ground cinnamon in the crumble mixture.
These Blackberry Crumble Bars are the ideal treat for summer gatherings, backyard BBQs, or simply a sweet afternoon pick-me-up. Serve them as is, or perhaps with a dollop of whipped cream or a scoop of vanilla ice cream for an extra special dessert.
