- 2 cups shredded cheese of choice
Mexican blend is preferred
- 1 cup chopped fresh cilantro
- 1 cup diced onion
- Toppings: pickled red onions

Prepare Ingredients: Gather your leftover birria, tortillas (corn or flour), diced onions, chopped cilantro, lime wedges, cheese, cooking oil, and any desired toppings such as salsa, hot sauce or sweet pickled red onions.
