About this Recipe
Tired of lackluster store-bought dressings that barely deliver on flavor? This Creamy Parmesan Peppercorn Dressing is about to become your new kitchen essential, transforming everyday salads into something truly special.
What sets this dressing apart is its incredible depth of flavor and luscious texture, achieved with simple, high-quality ingredients. The rich tang of sour cream and buttermilk beautifully balances the sharp, salty Parmesan, while fresh herbs and bold peppercorns create a vibrant, irresistible profile, far surpassing anything you'll buy at the grocery store.
Prepare for a dressing that’s wonderfully thick and coats every leaf, bursting with a savory, tangy richness. You'll taste the distinct nuttiness of Parmesan, the bright lift of red wine vinegar and buttermilk, and the aromatic punch of garlic paste and dried oregano. The star, however, is the coarse freshly cracked pepper, which provides a delightful bite and warming spice, making each spoonful incredibly satisfying. This dressing promises exceptional flavor without the fuss, coming together in just 10 minutes of prep.
For customization, while finely grated parmesan is called for, a different hard, aged cheese like Pecorino Romano could offer a sharper, saltier kick. The coarse freshly cracked pepper is central to this dressing's character; you can adjust the amount to suit your spice preference. If fresh Italian flat-leaf parsley isn't on hand, a small amount of dried parsley could be substituted, though fresh always offers a brighter flavor.
This versatile dressing isn't just for salads; drizzle it over roasted vegetables, use it as a dip for fresh crudités, or spread it on sandwiches for an extra layer of flavor. It's perfect for everyday meals or for elevating a simple gathering.
