Prepare for a wonderfully robust and flavorful soup that truly captures the essence of classic lasagna. You'll find a rich, savory broth infused with the hearty flavors of ground beef and/or Italian sausage, brightened by fire-roasted diced tomatoes and a generous marinara sauce. Tender, broken lasagna noodles mingle throughout, creating that signature pasta experience. The soup is substantial and satisfying, perfect for a filling main course. You have the flexibility to make it as thick and hearty or as brothy as you prefer, simply by adjusting the amount of beef broth.
This versatile Lasagna Soup welcomes personal touches to suit your taste. While the recipe suggests a combination of ground beef and Italian sausage for depth, you can certainly use just one or the other. For a lighter approach, ground turkey would be a suitable alternative. If you desire a thinner soup, keep extra beef broth on hand to stir in, while those who love a thicker, stew-like consistency can use less. Enhance the flavor profile further by experimenting with different Italian seasoning blends, or add a pinch of red pepper flakes for a subtle spicy kick.
This Easy Lasagna Soup makes a fantastic, crowd-pleasing meal for family dinners or a casual gathering. Serve it piping hot with a generous dollop of creamy ricotta, a sprinkle of fresh minced basil, and your favorite shredded Italian cheese blend or parmesan. Don't forget some crispy garlic croutons or warm cheesy garlic toasts on the side for dipping!
