- 2 pounds red potatoes
quartered
- 5 cloves garlic
minced
- 2 tablespoons oil
- 1 teaspoon Kosher salt
- 1/2 teaspoon fresh ground pepper
- 1 tablespoon butter
melted
- 1 1/2 tablespoons fresh parsley
chopped
Directions

Preheat oven to 450 degrees F. Line a large baking sheet with foil and grease with cooking spray.
