While maifun rice noodles or buckwheat soba noodles are excellent foundations for their texture and dietary benefits, feel free to experiment with other noodle types you love. If you’re not strictly vegan, honey can be used as a substitute for maple syrup. For an extra layer of flavor and visual appeal, don't skip the optional garnishes: a sprinkle of toasted sesame seeds adds a lovely crunch, and a dash of gochugaru (Korean chili flakes) or regular red chili flakes will boost the spice. These Gochujang Noodles are fantastic as a standalone meal for a speedy lunch or a comforting dinner for four. They are hearty enough on their own but would also pair beautifully with simple steamed vegetables or a crisp side salad.
