The brilliance of this recipe lies in swapping traditional mayonnaise for protein-rich plain Greek yogurt. This simple change drastically reduces calories while boosting the protein content, making for a surprisingly wholesome and satisfying dish. You still get that delightful creaminess, perfectly balanced with vibrant textures and savory notes that set it apart from heavier versions.
Get ready for a chicken salad that’s both refreshing and utterly satisfying. Each bite offers a delightful medley of tender shredded chicken, crisp celery, and the subtle sweetness of halved grapes. The diced red onion adds a gentle bite, all bound together by the tangy, smooth Greek yogurt dressing, brightened with Dijon mustard and fresh parsley. With only 360 calories per serving, it’s a guilt-free pleasure, incredibly easy to prepare, and comes together quickly, making it ideal for busy weeknights or meal prep.
While delicious as is, this Greek Yogurt Chicken Salad is wonderfully adaptable. For a different crunch, consider swapping the salted almonds for walnuts or pecans. If you prefer a milder onion flavor, soaking the diced red onion in cold water for a few minutes before adding can reduce its pungency. You can also play with the herbs; fresh dill would be a lovely addition instead of parsley, or even a sprinkle of chives for a subtle oniony kick.
Perfect for a quick lunch, a light dinner, or as part of a picnic spread, this easy chicken salad is incredibly versatile. Serve it nestled in crisp lettuce cups, piled high on whole-wheat bread, or alongside a mixed green salad for a complete and wholesome meal.
