
How To Make Haitian Sauce Pois
Ingredients
- 2 ½ Cups Black Beans
Rinsed
- 4 Cups Water
- 8 Cups Vegetable Broth

- 1 Tbsp. Olive Oil
- 3 Garlic Cloves
- 5 Whole Cloves
- 2 Tsp. Kosher Salt
- 1 Tsp. Cumin

Start by sorting and rinsing the beans. We recommend adding the beans to a colander and remove any stones or debris. Rinse the beans well and place the beans in the instant pot.Add 4 cups water and 4 cups vegetable broth. Close the Instant Pot with the lid, turn the knob to sealing. Select "Beans" and adjust the timer to 40 minutes.Allow the beans to natural release the pressure for 10 minutes.Remove 2 cups of the cooked beans and set aside in a bowl, without the liquid.

Blend the beans from the Instant pot with the liquid until liquify. For this step, we recommend using a good quality blender. We used our Vitamix to blend the beans until silky smooth. We blended our beans to the highest level (10) for about 1 minute and 45 seconds.Use a mortar and pestle, or food chopper or food grinder to crush or grind the whole cloves and garlic cloves. Set it aside.On the instant pot, select sauté and adjust the time to 30 minutes. In the instant pot add in the oil, when heated, add in the garlic and cloves mixture. Stir and cook the garlic and cloves for 30 seconds. Then add the green onions.Next, add in the blended bean sauce, 4 cups of vegetable broth, salt, and cumin. Mix well. Close the instant pot with the lid and turn the knob to sealing. Press cancel on the instant pot, then select sauté again and adjust the timer to 5 minutes. When the timer goes off, carefully quick release.Serve with white rice or mais moulin. Enjoy.
