Ingredients
- 2 clong-grain rice
- 4 slicebacon
- ½ lbMexican chorizo
casing removed
- 1 smallonion
- ½green bell pepper
- ½red bell pepper
- 3 clovegarlic
- 1 tspground cumin
- 1 tspsmoked paprika
- ½ tspchili powder
- 1 cantomatoes
with juices
- 3 cchicken broth
- ½ cpeas
- ¼ cfresh cilantro
- 1lime

In a large skillet or heavy-bottomed pot, cook the diced bacon over medium heat until crispy. Remove with a slotted spoon and set aside, leaving the bacon grease in the pan. Add the chorizo to the skillet and cook until browned, breaking it up with a spatula. Remove and set aside with the bacon.

In the same skillet, add the onion and bell peppers. Sauté for 3-4 minutes, or until softened. Stir in the garlic, cumin, smoked paprika, and chili powder (if using). Cook for another minute until fragrant.
