About this Recipe

Craving a deeply satisfying and wonderfully easy dinner that practically cleans itself up? This One Pan Roasted Chicken and Potatoes recipe delivers an incredibly flavorful meal, combining tender chicken, fluffy potatoes, and vibrant broccoli all on a single baking sheet.

The genius of this recipe lies in its one-pan approach, which simplifies cooking without compromising on taste. By roasting all the ingredients together, the savory juices from the chicken infuse into the honey gold potatoes and fresh broccoli, creating a harmonious blend of flavors that tastes far more complex than its simple preparation.

What you can expect is a plate full of succulent chicken tenderloins, roasted to perfection until golden and juicy. The honey gold potatoes emerge tender on the inside with delightfully crisp edges, while the broccoli florets retain a pleasant bite, adding a fresh contrast. A robust blend of garlic powder, onion powder, Italian seasonings, basil, and a hint of paprika coats every component, ensuring each bite is packed with aromatic flavor. Finally, a generous sprinkle of fat free cheddar cheese melts into the warm ingredients, adding a creamy, savory finish that ties everything together. This is a hearty, comforting dish that’s perfect for any night of the week.

This versatile dish is easy to customize to your preferences. You can swap the chicken tenderloins for other quick-cooking cuts like boneless chicken thighs, or even firm tofu for a vegetarian option. Feel free to experiment with different cheeses instead of fat free cheddar, or add other vegetables like bell peppers or carrots for extra color and nutrients. If you like a spicier kick, a pinch of red pepper flakes can be added with the other seasonings.

Perfect for a busy weeknight or a relaxed family dinner, this robust meal stands wonderfully on its own. Serve it directly from the pan for a rustic, family-style presentation that emphasizes its comforting, wholesome appeal.
