
Pineapple Banana Bread with Nutty Vanilla Wafer Topping
Ingredients
- 2 cwhole wheat flour
- 1 call-purpose flour
- 2 tspbaking powder
- 1 cbrown sugar
- ½ cwhite sugar
- 2 tspground cinnamon
- 3eggs
- ½ coil
- ½ csour cream
- 3 mediumbananas)
peeled and mashed. (Mine were overripe
- 1 canpineapple
well drained. Reserve 1/4 cup of the pineapple juice for the topping
- 1 cvanilla wafers
- ¼ cpineapple juice
- ¼ csugar
- ½ cwalnut pieces
can use more and any nut you like
Directions

Mix all dry ingredients together with a whisk in a large bowl. Add eggs, oil, sour cream, mashed bananas and crushed pineapple and mix with a mixer. Pour into two sprayed 9 inch loaf pans. Add topping.
Topping instructions

Mix together wafer crumbs with pineapple juice and sugar. Drop by teaspoon on top of bread mixture. Sprinkle with walnuts or nuts.

Bake in preheated 350 degree oven 60 to 65 minutes until done in center.
