About this Recipe

Imagine flavorful, perfectly cooked Mexican rice without standing over the stove. This incredibly easy recipe brings restaurant-style rice straight to your table, all thanks to your trusty rice cooker.

The brilliance of this recipe lies in its simplicity: your rice cooker handles all the heavy lifting, ensuring consistently fluffy, evenly cooked grains every time. You get all the classic flavors with minimal effort, making it an ideal side dish for busy weeknights or entertaining.

Prepare for a vibrant, savory side dish with tender long grain rice infused with the rich, slightly sweet notes of tomato paste and a subtle kick from diced green chilies and a pinch of red pepper flakes. Each spoonful offers a comforting blend of flavors, with the finely diced onion adding a gentle aromatic base. The butter enriches the rice, creating a luxurious mouthfeel that complements any main course, and the fresh cilantro garnish adds a bright, herbaceous finish.

This recipe is highly adaptable to your taste. Easily adjust the spice level by adding more red pepper flakes for an extra kick or omitting them for a milder profile. For an even drier rice, you can use a quarter to a third cup less liquid than specified. While low sodium chicken broth is called for, vegetable broth can be a suitable alternative for a vegetarian option.

This versatile Mexican rice is the perfect accompaniment to tacos, enchiladas, grilled meats, or your favorite Tex-Mex feast. Garnish generously with fresh cilantro just before serving for that authentic touch.
