- 5 pounds Yukon gold potatoes
peeled and cut into roughly 1-inch chunks
- 8 tablespoons/1/2 cup unsalted butter
melted, plus 3 tablespoons, cut into chunks, 1 stick

- 1 cup sour cream
- 1 bunch chives
