Soy Butter Glazed King Oyster Mushrooms
Ingredients
- 2 tablespoons unsalted butter
- 1 tablespoon light soy sauce
- 1/4 teaspoon dark soy sauce
- 1/2 teaspoon honey
- 1 clove garlic)
(grated or very finely minced
- 1/4 teaspoon black pepper
- 1 pound king oyster mushrooms
- 2 tablespoons vegetable oil
- 1 scallion
Directions
- 1
First, prepare the glaze by melting 2 tablespoons of butter in the microwave. Then stir in the light soy sauce, dark soy sauce, honey, grated garlic, and black pepper. Mix well and set aside.
- 2
Carefully slice the mushrooms lengthwise into ¼” thick slices.
- 3
Heat a non-stick or cast iron pan over medium high heat, and generously brush with vegetable oil. Add the first batch mushrooms in 1 layer, leaving them a little space to breathe so the mushrooms fry rather than steam.
- 4
Pan-fry for about 5 minutes per side, until golden brown. Repeat for another 2 batches to cook the rest of the mushrooms.
- 5
Add all the cooked mushrooms back to the pan, pour in the glaze, and immediately turn off the heat. Toss the mushrooms in the glaze using the residual heat of the pan. Garnish with chopped scallions and serve.

Why This Recipe Works
The magic of this recipe lies in its perfectly balanced soy butter glaze, a harmonious blend of savory umami from light and dark soy sauce, a touch of sweetness from honey, and aromatic garlic. It’s designed to truly showcase the versatility of these mushrooms with minimal effort.
Prepare for king oyster mushrooms that are tender yet pleasantly chewy, coated in a glossy, rich glaze. You'll taste an explosion of umami, accented by the pungent warmth of garlic, a subtle sweetness from the honey, and a hint of black pepper. The ease of preparation belies the depth of flavor you'll achieve, making this an unexpectedly gourmet-tasting side or main component that's incredibly simple to master. It's a naturally satisfying dish that highlights the best of the mushrooms.
This recipe offers flexibility for your pantry and palate. To adjust the overall salinity and deepen the color, you can experiment with the ratio of light and dark soy sauce. For a sweeter glaze, increase the amount of honey, or for a more assertive flavor, add a little extra grated garlic. While the recipe uses unsalted butter, you could opt for a high-quality vegan butter alternative to make it plant-based.
These savory king oyster mushrooms make an excellent side dish for grilled proteins like chicken or fish, or a fantastic vegetarian main course when served over steamed rice alongside your favorite stir-fried greens. Garnish with the sliced scallion for a fresh, aromatic finish.
