About this Recipe

Craving a dish that looks effortlessly elegant but comes together with surprising ease? This Spinach Pie (Spanakopita Casserole) delivers rich, savory flavors nestled in crisp, golden layers, perfect for any meal, from a simple family dinner to a festive gathering. Forget complicated preparations; this recipe brings the beloved tastes of a classic without the fuss.

What makes this spinach pie so incredibly satisfying is the harmonious blend of vibrant, fresh spinach, creamy Feta, and wholesome cottage cheeses, all brightened by aromatic dill and parsley. The true magic, however, lies in the delicate phyllo dough. Brushed with ample melted butter, it bakes into a multitude of impossibly flaky, golden layers that provide an irresistible textural contrast to the hearty, savory filling within. This thoughtful construction ensures every forkful is a symphony of crunch and creamy goodness.

Prepare for a truly delightful culinary experience. You'll encounter a beautiful contrast: the audible crackle and crunch of the golden phyllo crust giving way to a warm, tender, and incredibly flavorful interior. The combination of Feta and cottage cheese creates a complex tang and comforting richness, expertly balanced by the earthy notes of the cooked spinach. A hint of fresh onion and the aromatic embrace of dill and parsley tie all these components together, ensuring each serving is robust, deeply satisfying, and wonderfully aromatic. It’s a dish that feels both comforting and refined.

While this recipe shines brilliantly as presented, you can easily adapt it to your pantry or preferences. For a different cheesy dynamic, consider adjusting the ratio of Feta to cottage cheese, or explore adding a touch of grated Parmesan for an extra savory kick. Don't have fresh dill? You can slightly increase the dried dill or even introduce a pinch of dried mint for an interesting twist. If you're short on fresh onion, a small amount of finely minced shallot or even a pinch of onion powder can still provide that essential aromatic foundation.

This Spinach Pie is a wonderfully versatile dish, equally at home as a cozy weeknight dinner, an impressive centerpiece for brunch, or a lovely accompaniment to a holiday feast. Serve it warm, perhaps alongside a crisp, simple green salad or a bowl of hearty lentil soup, to truly appreciate its full array of flavors and textures.
