  • 6 Russet potatoes
  • 1/4 cup olive oil
  • 1/4 cup butter

    melted

  • salt and pepper to taste
  • 8 slices thin cut cheddar cheese

    cut into 1 inch squares

    cooked and crumbled

  • 1/3 cup sour cream
  • 2 tablespoons green onions
  • cooking spray
