- 1 canno-salt-added black beans
rinsed and drained
- 1 canmexican stewed tomatoes
undrained
- 1jar roasted sweet red peppers
drained and cut into strips, 12 ounces
- 1 largeonion
chopped
- pepper to taste
- hot cooked rice
Directions

Place the chicken in a 3-qt. slow cooker. In a bowl, combine the beans, tomatoes, red peppers, onion and pepper. Pour over the chicken. Cover and cook on low until chicken is tender, about 6 hours. Serve with rice.
