In this cabbage salad, cabbage maintains a nice crunch when it's tossed with an easy dressing. Make this healthy salad to accompany your next meal.

Ingredients

  • 2 tablespoonslemon juice
  • 2 tablespoonsextra-virgin olive oil
  • 2 tablespoonschopped fresh flat-leaf parsley
  • 1 tablespoondijon mustard
  • 1 tablespoonhoney
  • 1 teaspoongarlic powder
  • ½ teaspoonsalt
  • ½ teaspoonground pepper
  • 8 cupsshredded green cabbage (from 1 small head)

Directions

    Whisk lemon juice, oil, parsley, mustard, honey, garlic powder, salt and pepper together in a large bowl. Add cabbage and toss to coat; let stand for 10 minutes.
