  • 1 red bell pepper

  • 1 lb. ground beef

  • 1 tsp. ground cumin
  • 1 tsp. paprika
  • 1/2 tsp. black pepper
  • 4 garlic cloves

  • 4 vine-ripened tomatoes

  • 1 large zucchini

    quartered lengthwise and sliced

  • 2 c. chicken broth
  • 1 c. long-grain white rice
  • 1/4 c. fresh parsley or cilantro

    chopped, plus more for sprinkling

  • 1 tbsp. Worcestershire sauce
  • 2 c. shredded pepper jack cheese
