  • Salt and Pepper to taste
  • 1 tbs Garlic Powder
  • 2 tbs Italian Seasoning

Directions

  1. 1

    Preheat the oven to 375°

  2. 2

In a large skillet, heat the oil and add the sliced peppers and onions. Season the vegetables with salt, pepper and1 tbs of the Italian seasoning and sauté them until they are soft. This should take about 3- 5 minutes.

Add the ground beef and using a wooden spoon or spatula break the meat into small pieces while it cooks. Once the beef has browned, drain the fat and season it with a little more salt and pepper.

  4. 4

Add the chopped garlic and stir it into the meat and vegetables for another 1-2 minutes.

  5. 5

Add the tomato paste, diced tomatoes and beef broth and stir it into the beef and vegetables.

  6. 6

Add the cooked white rice and season everything one last time with salt, pepper, garlic powder and 1 tbs of Italian seasoning and stir it all together until it’s evenly combined.

  7. 7

Add the mixture to a baking dish and smooth the top out so that it’s flat and even and sprinkle the top with the shredded mozzarella cheese.

  8. 8

Place the casserole into the oven for 20-25 minutes or until the cheese is melted and the sides are hot and bubbly.

  9. 9

Finally, garnish with parsley (optional), let it cool slightly and enjoy.

About this Recipe

Craving the comforting, savory flavors of classic stuffed peppers without all the individual effort? This Stuffed Pepper Casserole delivers all the beloved taste in a convenient, hearty bake that’s perfect for a satisfying weeknight meal or a casual gathering.

This recipe works by layering rich, familiar flavors into one harmonious dish. By sautéing the vibrant red, green, and yellow bell peppers and onions first, you develop their sweetness and create a tender base. This melds beautifully with seasoned ground beef and cooked rice, all brought together in a robust tomato sauce, then crowned with bubbly mozzarella cheese.

Expect a casserole that's wonderfully aromatic and deeply satisfying. Each spoonful offers tender bell peppers and savory ground beef, infused with garlic and Italian seasoning, complemented by fluffy cooked rice. The rich tomato base provides a perfect counterpoint, all crowned with a gooey, browned layer of mozzarella cheese that adds a delightful texture and creamy finish. This dish is designed to be a complete meal, offering a symphony of textures and tastes that are both comforting and flavorful.

Feel free to make this recipe your own with a few simple tweaks. If you don't have all three bell pepper colors, using just one or two varieties will work perfectly fine. For a different flavor profile, consider swapping the ground beef for ground turkey or even a plant-based ground substitute to make it vegetarian-friendly. You can also adjust the amount of Italian seasoning or garlic powder to suit your family's preferences. If mozzarella isn't your favorite, cheddar or provolone would also melt beautifully.

This Stuffed Pepper Casserole is a fantastic centerpiece for family dinner, a cozy meal for a cool evening, or a welcome addition to a potluck spread. Serve it hot, straight from the oven, perhaps garnished with fresh parsley for a touch of brightness, making for an inviting presentation.
