With a flavor profile inspired by pasta e fagioli, this weeknight pasta recipe coaxes rich flavor out of simple ingredients while enlisting the oven to create a luscious sauce from roasted tomatoes and white beans. Essentially, the dish requires just three steps: Boil pasta, roast your sauce ingredients, then stir together until the pasta is glossy. When roasted in the oven, the beans become crispy, like croutons, and break down in a way that helps thicken the sauce. Though a flurry of freshly grated cheese would be welcome on top, this otherwise-vegan dish doesn’t need it: The roasted tomato sauce is rich and luscious, fortified by starchy pasta water, roasted beans and a good glug of extra-virgin olive oil.
This Slow Cooker Thai Style Pork recipe is a delicious and simple way to enjoy tender, flavorful pork infused with Asian-inspired ingredients. Cheeseburger Rice is an easy one pan meal that can be made in less than 30 minutes for under $10! INGREDIENTS 1 lb of ground beef 1 tsp each of paprika, oregano, garlic powder, onion powder 1/2 tsp each of salt and pepper 1 chopped onion 1 1/2 cups of beef broth 1 cup long grain white rice, rinsed 8 oz can of tomato sauce 1 tbsp minced garlic 1 1/2 cups of shredded Colby Jack cheese INSTRUCTIONS Heat a large skillet over medium-high heat. Brown 1 lb of ground beef with chopped onion. Season with salt, pepper, paprika, oregano, garlic powder and onion powder. Once the beef is browned, drain any extra grease if needed. Add the minced garlic and stir. Next, add the rinsed uncooked rice, beef broth, and tomato sauce to the skillet. Stir everything together well. Bring to a quick boil and turn heat down to low. Cover with a lid and cook for about 15 minutes stirring once or twice to keep the rice from sticking to the bottom of the pan. Once the rice is cooked add about 1 cup of cheese and stir. Top with a little bit more cheese and let sit on the stove until the cheese melts or put it in the oven under broil for just a couple of minutes. Top with dried parsley. Enjoy! This isn’t just any beef stew, however. This stew is fancy. It’s luxe and lush and so intensely flavored, if you’re anything like me, after one bite you’ll forget every crock pot attempt that yielded thin broths, tough meat, weak flavor and, always, unevenly cooked vegetables (potato mush and still-rubbery carrots, sigh), or at least I did. It will an excellent consolation prize for a winter you’re totally ready to be done with, pretty as it can occasionally be.
