  • 2 green onions

    diced

Add the cooked bacon (reserve some to sprinkle on top of the casserole), 1 1/2 cups of the cheddar cheese, chopped parsley, garlic powder, 1 of the diced green onions, salt, and pepper; stir well.

  5. 5

Scoop the potato mixture into a 2-quart glass baking dish. Top with the reserved bacon, 1/2 cup of cheddar cheese, and the remaining 1 diced green onion.

  6. 6

Bake the casserole at 375F for 25-30 minutes until it is hot and the cheese is melted.

About this Recipe

Craving the comforting, loaded flavors of a twice baked potato without all the individual effort? This Twice Baked Potato Casserole delivers all the creamy, cheesy goodness in an easy-to-serve dish perfect for any gathering or weeknight meal.

What sets this casserole apart is its irresistible richness, combining two types of cheese—sharp cheddar for savory depth and tangy cream cheese for an extra velvety texture—with a generous amount of sour cream and butter. Plus, plenty of crispy bacon is stirred throughout, ensuring a smoky, savory bite in every spoonful, transforming classic loaded potato flavors into a cohesive, crowd-pleasing experience.

You can expect a wonderfully indulgent side dish that’s bursting with savory flavors. Each scoop offers fluffy mashed potato infused with aromatic garlic, rich dairy, and salty bacon, all bound together by melted cheddar cheese. The texture is velvety smooth, beautifully complemented by the textural contrast of crumbled bacon and fresh green onion. It's a hearty, satisfying dish that feels both elevated and approachable, guaranteed to be a hit with everyone at the table.

Customization & Variations

Feel free to experiment with different cheeses; Monterey Jack or a smoky gouda would also work beautifully in place of or in addition to cheddar. For a brighter finish, a sprinkle of fresh chives can be used instead of parsley or green onions. You could also stir in a pinch of paprika or a dash of hot sauce for an extra layer of flavor and warmth.

This casserole is an ideal accompaniment to roasted meats, grilled chicken, or holiday dinners, making any meal feel special and complete. Serve it straight from the dish for a casual family dinner or as a centerpiece for a buffet-style spread.
