Ingredients

- 1 small red bell pepper
sliced
- 1 can black beans
rinsed and drained, 15 oz.
- 1 can green chilies
4.5 oz.
- 1/2 cup corn
fresh, frozen or canned
- 1 1/2 tablespoons taco seasoning
- Soft or hard corn tortilla shells
warmed
- Shredded lettuce
shredded cheese, chopped cilantro, sliced avocado or guac, salsa or pico de gallo, Greek yogurt or sour cream, hot sauce, pickled red onions, fresh lime juice

Heat oil in a large skillet over medium high heat. Add the bell pepper and sauté for 6-7 minutes, until charred and tender.

Add the black beans, chilies, corn and taco seasoning and stir well to combine. Heat for 1-2 minutes, until warmed through.
